On the dock this week – fresh, wild caught Pacific steelhead trout from Washington State. That’s a mouthful! From Sea to Table… “They are fished in the Quileute River by the Quinault tribal nation. Steelhead have orange flesh like salmon but the flavor is somewhere in between a salmon and a trout, very mild and sweet. The fish will have medium flakes with a tender texture.”
